Recipe of the Month ~ February 2010

Kale Avocado Salad


1 head kale
1 lemon
1/2 tsp. sea salt
2 T. olive oil
2 avocados
2 roma tomatoes
1 c. red cabbage
1/2 red onion
2 T. dulse
3 T. hemp seeds
1/4 tsp. cayenne
more salt to taste

Finely chop the kale into thin strips and place in a bowl. Add the juice of one lemon and 1/2 T. salt to the kale and massage thoroughly with your hands. Add the olive oil and avocados to the bowl, and again massage the kale with your hands until well mixed and all leaves are coated. This softens the kale and makes it delicious. Chop the tomatoes, red cabbage, and red onion, then add to the bowl. Add the dulse, hemp seeds, and cayenne. Toss and enjoy!
